Sugar Maple
The exhilaration that sweeps through people when the warm spring sun first coaxes the temperature above freezing is due entirely to the sugar maple. For a few weeks, many of us, including some who are a good distance from the nearest evaporator, evaluate each day on the basis of how the sap is running.
